Brut serves a tasting menu only — there is no à la carte option. Head chef Eduardo Martínez-Gil works exclusively with seasonal, locally sourced Mallorcan ingredients, guided by a zero-waste and fermentation philosophy that brings together techniques and flavours in unexpected ways. Each course is presented and explained directly at the counter, with cooking and service taking place openly in front of guests.

House-Made Drinks

Alongside the food menu, Brut produces its own craft beers, kombucha, cider, mead and digestifs in-house. The drinks are an integral part of the overall concept and are treated as standalone creations in their own right, just like the dishes.

The restaurant occupies a former warehouse featuring a concrete counter and an open kitchen. Capacity is kept deliberately small: each evening, all guests dine together in a single shared sitting at the bar. The industrial, loft-like space creates an intimate and focused atmosphere.
