PaneNostro is an artisan organic bakery in the heart of Palma, championing ancient Mallorcan grain varieties, sourdough fermentation and entirely natural ingredients.
Bread as a Craft
The soul of PaneNostro lies in its loaves — baked entirely with sourdough and completely free from commercial yeast. The flour comes from ancient Mallorcan grain varieties, stone-milled and sourced to organic standards. The range includes buckwheat bread, rye bread, spelt, Kamut and Xeixa loaves, as well as Llonguets. Alongside the bread you'll find biscuits — including Xeixa-linseed biscuits and Panallets — plus blueberry muffins, banana-coconut muffins, carob brownies and sugar-free brownies. Gluten-free, vegan, lactose-free and sugar-free options are all part of the offering; do note, however, that gluten-free products are baked in the same workshop as those containing gluten.
Transparency & Workshops
A glass partition lets you watch the bakers at work — flour dust and all — making the production process a deliberate part of the experience. For those who want to go deeper, PaneNostro runs introductory courses in sourdough and ancient Mallorcan flours, where you can get hands-on with recipes using Xeixa and Blat Mort.
In the Centre Quarter
The bakery is situated at Plaça Nova de la Ferreria 6 in Palma's Centre quarter. If you're travelling from further afield, it's worth reserving your bread in advance, as popular varieties can sell out quickly.
