The concept at Selvatge can be summed up in a single word: sharing. All ingredients are sourced from local and sustainable producers — some even from the restaurant's own garden. The cooking is creative and original without feeling forced: dishes such as tuna tartare, octopus rice, stuffed quail, grouper and aubergine are hallmarks of a style that brings together regional produce and bold, distinctive combinations. Desserts are considered a highlight of the meal, and the wine list impresses with bottles from the island, complemented by an in-house hierbas.

From the outside, the building is unassuming — inside, a carefully restored manor house reveals itself, with elegant décor, a leafy inner courtyard, a terrace and a garden. Considerable investment has clearly gone into the restoration of the building, terrace and garden. The peaceful setting opposite the church on Selva's main square adds to the relaxed, unhurried atmosphere.
