Fresh pasta is at the heart of the kitchen: carbonara, cacio e pepe, ravioli, tortelloni and truffle ravioli all feature prominently on the menu. The cacio e pepe is finished tableside in a cheese wheel. The black squid-ink risotto is another dish that tends to stay with guests long after the meal.
