UCO Bakery Obrador is an artisan bakery in Palma that is wholly committed to 100% sourdough and makes everything by hand.
Sourdough as a founding principle
Every single bread and pastry at UCO Bakery is made with sourdough — no exceptions. The result is a loaf that holds its flavour for several days. The range includes an activated-seed bread, focaccia, a purple corn bread, an ajo-parmesano loaf, a cacao bread and a carob-snail pastry. Croissants — including a pistachio version — and napolitanas de chocolate also feature. Everything is handmade and prepared with quality ingredients.
The story behind UCO
UCO was founded by Cate and Gus, who came from hospitality and law respectively, and have been running the project since 2018. Their motivation was a personal desire for healthier bread and a closer connection to the island. The Avinguda Argentina site is the obrador — the bakehouse — and also the point of sale. UCO operates several locations across Mallorca.
Workshops at the Obrador
Roughly once a month, UCO Bakery runs a workshop teaching you how to bake sourdough bread at home. Sessions are led by co-founder Gustavo himself.
