In Costa d'en Blanes in the southwest of the island, the refined Mar Sea Club has opened – tucked into the extensive gardens of the five-star St. Regis Mardavall Mallorca Resort, just a few metres from the sea and close to the Puerto Portals marina. You are warmly welcome here, whether you are a hotel guest or not: for a cool drink in a light sea breeze or a light summer meal right by the water.

What makes Mar Sea Club special

Mar Sea Club is the alfresco address of the St. Regis Mardavall – the five-star resort that spreads across four terracotta-roofed buildings, several pools and manicured gardens along the southwest coast. The kitchen follows a Mediterranean signature with a Latin American twist, led by a team around Executive Chef Pau Oliver and Chef Diego Quispe.

Both bring serious Michelin-starred pedigree. Mallorca-born Pau Oliver cooked at Tristán in Puerto Portals (two Michelin stars) and at Plat d'Or on Son Vida (one star), and served as executive chef of Grupo Cappuccino. Argentine Diego Quispe spent more than a decade in starred kitchens, including the three-star Mirazur and Copenhagen's 108 (one star), before helping to shape the menu here.

Kitchen & drinks

The menu offers tempting choices from the sea and the fields. Fancy a seafood ceviche, tuna tataki, perlita caviar with blinis, crème fraîche, egg and chives, or blue lobster with garlic and white wine? High-quality, finely marbled meat such as Wagyu beef and grilled fish round out the offering, alongside playful touches like Jamaican jerk chicken, wagyu tacos and lobster cannelloni. If you want to share a rice dish, it arrives as arroz a la llauna – served on a cork platform that keeps it at temperature. For a smaller appetite there are pasta, burgers and tacos, and for a sweet finish a chocolate cake with raspberries and crème fraîche, or a fruit salad with melon, dragon fruit and lychee, given extra zing by apricot ice cream.

Cocktails, wine & champagne

Settle into the lounge chairs overlooking the sea and choose between Latin American-inspired cocktails – such as a Grapefruit Pisco Collins with lemon juice, sugar and pink grapefruit juice, or a Romero Teqroni with tequila, Campari, red vermouth, rosemary syrup, orange bitters and lemon juice. The wine list features regional, national and international references, and at a resort like the Mardavall a well-chilled champagne dancing in the glass is of course also on offer.

Atmosphere & the best time to go

Mar Sea Club looks as if it has always been there – so harmoniously does it fit into the large garden of the upscale resort. That is also down to the choice of colours: different shades of blue as a tribute to the sea, plus plenty of white, beige and grey. Generous sun protection provides shady spots even at the height of summer. Hotel manager Stijn Oyen sums it up: with its refined, understated luxury, the club is an ideal match for the soul of the St. Regis.

Lunch is served daily and dinner from Friday to Tuesday – a quiet lunch by the water or a sunset drink are the finest moments here. Those arriving by their own yacht can use the complimentary tender service from the open sea; the dress code is smart casual, and a dedicated kids' menu makes the club work for families too.
