Marc Fosh is the Michelin-starred address for creative Mediterranean cuisine in the heart of Palma''s old town, set on the ground floor of the Hotel Convent de la Missió, a 17th-century former convent. Rather than ordering à la carte, you work your way through finely composed tasting menus that put the very best Balearic produce centre stage.

What makes Marc Fosh special
Marc Fosh, born in Kent in 1963, trained in London – at the Greenhouse and the Michelin-starred Chelsea Room – and has cooked in Spain since 1991. In 2002 he became the first British chef ever to be awarded a Michelin star in Spain. The restaurant has held that star ever since, alongside a Repsol Sol.
His approach is clear: clean flavours, immaculate stocks and sauces, Mediterranean ingredients in simply built yet considered combinations. Many of those ingredients come from the restaurant''s own Fosh Farm at Finca Son Mir, a 17th-century estate of red earth and olive trees where herbs and vegetables are grown organically.

Cuisine and menu
Dining is tasting-menu only. Lunch brings shorter menus as a relaxed introduction; the evening centres on the full „Aromas del Mediterráneo“ menu – currently around 139 euros, with an optional wine pairing and a cheese course for a supplement.
The plates play with local produce and fine contrasts: cannelloni with marinated „Mollera“ (a local rock fish) and lemon gel, a black-olive brioche with tuna tartare, slow-cooked pigeon over charcoal with Pedro Ximénez jus. Among Fosh''s signatures is marinated tuna with a carpaccio of Sóller prawn and plankton jelly. The Michelin Guide recently singled out a small oven-baked „Conill amb Cargols“ – snails and rabbit with parsley purée.
The wine list runs broad, from Mallorcan bottles through mainland Spain to international names; the pairings are curated by the sommelier (on Star Wine List, overseen by Mallorca ambassador Gabriel Lucas).

Atmosphere and location
The restaurant sits on the ground floor of the Convent de la Missió, tucked down a narrow old-town lane. Inside you find a minimalist, light-filled modern interior with a small patio terrace – calm, bright and unfussy. The cathedral and Plaça Major are just a few minutes on foot.
