Marc Fosh, born in Kent in 1963, trained in London – at the Greenhouse and the Michelin-starred Chelsea Room – and has cooked in Spain since 1991. In 2002 he became the first British chef ever to be awarded a Michelin star in Spain. The restaurant has held that star ever since, alongside a Repsol Sol.

His approach is clear: clean flavours, immaculate stocks and sauces, Mediterranean ingredients in simply built yet considered combinations. Many of those ingredients come from the restaurant''s own Fosh Farm at Finca Son Mir, a 17th-century estate of red earth and olive trees where herbs and vegetables are grown organically.
