Dinamics is the pizzeria of Banyalbufar, and it stands exactly where you would expect it in a Tramuntana village: on the Ma-10, the road that runs high above the sea along the west coast and straight through the middle of the place. The village is small, the menu is short, and the evening has no programme here beyond eating. Dinamics has been going since 2019, and the self-description on its own website is exactly three words long: Gastronomía con Amor. The house is run by Pablo Useleti. What reaches the table is written out on handwritten sheets — starters, pasta, pizzas, salads, a short wine list. It is hard to present a menu with less fuss than that. The menu at Dinamics The starters stay brief: nachos with tomato and cheese, provolone with bread, bruschetta, carpaccio. The pasta line runs to two dishes, lasaña boloñesa and cannelloni with spinach and ricotta — the latter come in for striking praise from guests. The salads are not an afterthought. Alongside the mixed salad and the caprese there is one with salmon, one with chickpeas, avocado, feta and lemon, and one with spinach, goat's cheese and honey. Anyone who only wants something light in the evening eats no worse here than the table next door. The wine list fits on half a page: a house wine, an Albariño and a Verdejo among the whites, a Rioja and a Mallorcan from Binissalem among the reds. The tiramisu is made in house. Pizzas with first names Pizza is the core, and the menu lists close to twenty of them. A striking number carry first names: Valentino with pepperoni and jalapeños, Ariana as the vegetarian one, Levi with egg, salami, onion and mushrooms, Ragazza with serrano, rocket and parmesan, Salmonetti with salmon, rocket and onion, Humberts and Di Paolo both with goat's cheese, Jaumet's with cooked ham and goat's cheese. Beside them stand the classics: margherita, funghi, four cheeses with goat's cheese, hawaii, tonno, prosciutto, romana, caprese, rustica, calzone. One carries the name of the village. The Pizza Banyalbufar comes with sobrassada — the shortest possible answer to the question of what an Italian menu on Mallorca has to do with the island. More can always be added: cheese, sobrassada, rocket, egg, anchovies and goat's cheese are listed as extras, and the kitchen will put together a pizza to your own wishes. Terrace, takeaway and private parties There are seats outside, music plays indoors, and the house describes itself as accessible for guests with reduced mobility. Air conditioning and free wifi are part of it, and you pay in cash or by card, contactless included. Two things are worth a phone call beforehand. If you want to take the pizza away and eat it somewhere along the coast, you can order ahead — takeaway is a fixed part of the operation. And the place can be asked about private parties. Given the size of the house, booking is in any case the better idea than hoping for a free table on the spur of the moment. Dinamics in the village Banyalbufar is not a place you drive past between Estellencs and Valldemossa without noticing: hundreds of dry-stone terraces drop towards the sea here, and the Malvasía grape gave the village its reputation. The long-distance path GR 221, the dry-stone route across the Serra de Tramuntana, also runs through the village — which explains why on some evenings there are walking boots under the chairs. Dinamics sits in the middle of all that, a few steps from the Plaça de la Vila. No panorama restaurant, no concept that needs explaining: a village place where the evening starts with a pizza and ends with homemade tiramisu.
