Celler Tianna Negre is an organic winery on the edge of Binissalem, in the heart of the DO Binissalem and the Es Raiguer wine country at the foot of the Serra de Tramuntana. The Morey-Garau family – also behind Bodega Túnel – turned an old, inherited Manto Negro vineyard into a modern winery clad in local stone. The construction project began in 2004 and the first harvest came in 2007.

What makes Tianna Negre special

Architect and managing director Xisca Morey describes the estate like a building: "wine is like an architectural project." The spectacular structure of local stone blends almost invisibly into the vines and is engineered for optimal energy and working conditions. Tianna Negre is not only 100% organic but runs as a circular-economy estate, producing its own olive oil too.

Wines & grape varieties

The focus is on indigenous grapes – above all Manto Negro and the white Prensal Blanc, alongside Callet, Escursac, Gorgollassa, Giró Ros and Muscat, supplemented by Chardonnay, Syrah and Cabernet Sauvignon. Around twelve varieties grow here; in partnership with the regional agriculture department the estate cultivates up to eleven native varieties and rescued the near-extinct Gorgollassa.

The flagship "Tianna Negre" red blends Manto Negro, Callet, Cabernet Sauvignon and Syrah: hand-harvested, macerated for 38 days and aged 10 months in new French oak, with aromas of ripe black fruit. The portfolio also includes Ses Nines, popular on island restaurant lists, the Sommelier Collection of single-varietal Callet and Manto Negro, the limited Boutique Wines TN5 (including an orange wine from Giró Ros) and the fresh white Columpio.

A visit starts with a guided tour through part of the vines and the modern cellar – the journey from grape to glass. You then taste several wines in a small group, paired with Mallorcan tapas using island products such as sobrasada and cheese, plus the estate's own olive oil. History & terroir

The roots reach back to a roughly 35-year-old Manto Negro vineyard inherited by Antonia Morey; the family's first wines were still bottled in a garage. Today Tianna Negre farms around 55 hectares of organic vines across ten estates in Binissalem and Consell, bottling about 300,000 a year. The vines sit on the iron-rich, reddish-brown limestone-clay soils known here as "Call Vermell" – a terroir that gives the wines their clear Tramuntana signature.
