Mistral Coffee is Palma's specialty coffee pioneer: founded in 2017 by Greg Schuler and Agata Mikulska, the roastery was the first of its kind on Mallorca. The Coffee House sits on Plaça de Weyler, a central square just a few steps from Passeig de Born, in the former premises of a jeweller – a stylish interior with a relaxed, urban feel.

What makes Mistral Coffee special
Greg, a former sailor who spent part of his life in Kenya, and Agata, a trained physiotherapist and former bar owner, opened their roastery at a time when others still sourced their beans from the mainland. Roasting on the island was new back then – and it became Mistral's signature.
The coffee is roasted on a 12-kilo Probat (Probatone) in small batches, with a focus on clarity, sweetness and balance. The beans are traceable and seasonal, often sourced in direct contact with farms and cooperatives. That the quality holds up is borne out in the press: Mistral has been featured in Harper's Bazaar, the Financial Times, Monocle and Tapas Magazine, among others.

Coffee & menu
The focus is on the coffee itself: organically grown beans from countries such as Kenya, Ethiopia, Brazil, Rwanda, Costa Rica, Colombia and Honduras, with the origins rotating seasonally along the harvest calendar. The same care goes into filter and espresso alike, and the team is happy to explain how best to brew the beans at home – from cold brew to flat white.
Alongside it, a small, fine menu: sourdough toasts (the halloumi toast is a long-standing favourite), French toast, homemade banana bread, cinnamon rolls and cakes, plus the Alchemy Bowl with quinoa, hummus, roasted squash and homemade pickles, available vegan or with chicken. There is at least one vegan option every day, along with gluten-free alternatives. The shop stocks freshly roasted beans as well as grinders, presses and machines.

Atmosphere & location
The well-appointed Coffee House on Plaça de Weyler also has a terrace and an upstairs space – good for a relaxed breakfast, a light lunch or working on a laptop. If you'd rather explore the island, Mistral also runs the small Coffee Banc near Plaça Major and a café right on the beach at Cala Major.
