What is Greixonera?
Greixonera is a baked dessert with a pudding-like consistency: tender and creamy, often still slightly moist in the center and topped with a golden crust. Depending on the recipe the texture ranges from very smooth to mildly grainy; typical, restrained flavors include citrus or cinnamon.
Origins and traditional preparation
Greixonera has peasant roots and is part of Mallorca's home cooking: simple ingredients, little fuss, baked in the oven. Traditionally it was baked in a colored clay mold because that type of vessel distributes heat evenly and used to be common in the kitchen.

Greixonera de brossat and using Ensaïmada leftovers
The 'de brossat' variation uses brossat, a fresh whey cheese, which gives the dish creaminess and a mild, fresh note. Another household practice is using leftovers: crumbled, stale Ensaïmada is mixed with eggs, milk and sweetness and baked — producing a fine bread-pudding–like dish that wastes nothing.
Differences to the Menorcan version and typical occasions
On Menorca there are similar oven desserts that tend to be denser and more often use stale bread instead of fresh cheese; choice of spices and texture vary regionally. Greixonera is served both as the end of a meal and with morning coffee or on cooler days, either warm or at room temperature.
