A homemade tortilla is really delicious. It's practical because you only need a few ingredients, which you have in the house anyway. And it's also versatile. After all, it can be served warm or cold. In short, a tortilla de patatas or tortilla española is a simple, typical Spanish dish for all occasions. By the way, it is a dish that is not missing in almost every tapas bar on Mallorca.
What you need: potatoes, eggs, onion, olive oil, salt - that's it. There are different ways to prepare it. Some Spanish households use already cooked potatoes for a tortilla , others use raw potatoes, which are then slowly lightly fried in oil in a pan without taking color. Here is a recipe using raw potatoes.
By the way, this potato omelet still tastes good the next day. If you store the tortilla, however, you should put it in the fridge and cover it - so it doesn't dry out and stays nice and juicy. You want to prepare a delicious baguette for on the go? A piece of tortilla is perfect for that, too.
Here's how:
Ingredients (f. 4 pers.):
- 4-5 medium, waxy potatoes
- salt
- about 200 ml olive oil
- 1 gr. onion
- 5 eggs
Preparation:
Peel potatoes, cut into small cubes. Add a little salt. Mix well. Heat olive oil in a pan of about 24 cm diameter, add potato cubes. Cook gently over medium heat for about 10 minutes - or until cooked through. Meanwhile, peel and dice onion. In a second pan, sauté in a little oil until translucent. Place eggs with a little salt in a large bowl, mix well. Place potatoes in a colander to drain excess oil and allow potatoes to cool slightly. Then add potato and onion cubes to eggs, stir in, let sit briefly.
Add 2-3 tablespoons of oil to pan, pour in tortilla mixture, gently fry for about 5 to 7 min over medium heat until the underside is golden. The mixture should not stick to the edges of the pan, loosen with a spatula. Flip tortilla. This is best done with the help of a large plate. Slide tortilla from plate back into pan, now fry second side for about 5-7 min. Place the cleaned plate or a round serving plate on the pan, turn the pan over. The tortilla is ready to serve. Serve with salad and bread.
