Meat at the centre

The beating heart of Brasa Madre is its Carnes Maduradas — dry-aged cuts from the Bos Taurus Primigenius breed. Chef Gonzalo Chávez selects every piece personally and brings new cuts to the menu each week. Ribeye and solomillo are among the cuts that define the restaurant, and both the ageing process and the preparation over the brasa are consistently praised. The menu is deliberately concise — which makes perfect sense given the quality of each dish. Alongside the meat you'll find Argentine empanadas, seasonal tomatoes dressed with Mallorcan olive oil, and sides such as potatoes, grilled mini peppers and chimichurri. Desserts include alfajor and macarons, among others.
