The menu at Calixto is stripped back to the essentials: paella, and paella alone, in four varieties – vegetarian, meat, fish, and a traditional mixed paella. Every portion is made fresh to order, which does mean a bit of a wait. The socarrat – the crispy rice crust that forms at the bottom of the pan – is something of a trademark here. Sangria is the natural companion to the paella, and it comes highly recommended.
