The Concept: Omakase at the Counter

Kno-ma is a barra omakase – a format where you sit directly at the counter and watch the kitchen at work. Chef Miguel prepares each course in front of you, talking you through the ingredients, techniques and provenance along the way. The menu follows the seasons and changes accordingly. Alongside the food, two drinks pairings are available to choose from: wine or sake.

The focus is firmly on fresh, high-quality ingredients, with fish and tuna taking centre stage. Local produce is used wherever possible. Standout dishes include lobster, wagyu, eel and tuna in various preparations, as well as desserts. The sushi is traditionally executed, complemented by creative interpretations of Japanese flavours.
