Two concepts open together

Saltao opened at the same time as Azotea Club de Mar. The two concepts have different dining offerings, and Mallorca is Saltao's second location after Marbella.

Saltao's culinary concept

Saltao's concept was developed by Víctor Gutiérrez and his daughter, Paula Gutiérrez. Víctor Gutiérrez is behind Tayta, Spain's only Peruvian restaurant with a Michelin star, while Paula Gutiérrez was named Best Female Chef of the Year in 2026.

Azotea Grupo as operator

Azotea Grupo was selected to lead the dining offer at Club de Mar-Mallorca. The company has more than 15 projects across Madrid, Andalusia and the Balearic Islands.

A new phase for the marina

Club de Mar-Mallorca is undergoing a renewal. Dining is set to play a central role in opening the site to the city.
