On the plains around Palma and at the beaches along the east coast, the perceived temperature at midday easily reaches 26-27°C. What to Do in Mallorca in May

Is May a Good Time to Visit Mallorca?
May belongs in the top three travel months for Mallorca — and for good reason. It offers near-summer weather, significantly fewer tourists than June through August, and still-moderate prices. Flights from the UK are plentiful and affordable, the hotels have long since opened, and the entire tourist infrastructure is running at full capacity.
Couples and active holidaymakers particularly benefit in May. Hiking, cycling, sailing, golf — everything is more pleasant at 23°C than at 31°C in July. Families benefit from the fact that half-term often falls in late May, and the beaches are far from overcrowded.
The only real drawback: the sea at 18°C is not to everyone's taste. Those who absolutely need warm bathing water should wait until June. And on the 4 rainy days in May, it can indeed pour for an entire afternoon — so pack a plan B, such as a visit to the Drach Caves or a wine tasting in Binissalem. But these are minor quibbles for what is, by any measure, a superb time to visit.
Packing Tips for Mallorca in May
May demands versatility in the suitcase: summer clothes for the day, a light jacket or cardigan for the evenings. Swimwear absolutely belongs in the luggage, even if the sea is still fresh — hotel pool temperatures in May are already perfect. A light rain jacket provides cover during the infrequent showers. Suncream with SPF 30 is advisable — the May sun already packs a punch, especially around midday. Comfortable walking shoes are worthwhile for excursions into the Tramuntana; at the beach, flip-flops will do.
