The cooks must use locally sourced ingredients, says Koldo Royo, president of the Association of Chefs Based in the Balearic Islands (Ascaib). Separate panels of 12 judges will assess the savoury and sweet entries. They will first review the recipes, then choose the winning dishes, weighing taste, texture, presentation, freshness, originality and quality.

Before the contest begins, Gloria Fluxà, Gloria Carrión and journalist Lidia Larrey will receive awards at 16.00 for their contributions to raising the profile of gastronomy. Palma City Council announced the event on Friday.
