Mallorca has two captains in a four-island team heading to Spain’s cooking and baking championship. Ricardo Rossi and José Cortés will lead the Balearic delegation in Badajoz, in Spain’s Extremadura region, on 19 and 20 October.

Rossi is a member of the Association of Chefs and Pastry Chefs Based in the Balearic Islands (Ascaib), which is coordinating the team. Cortés is chef at Qanat de Treurer. Ascaib president Koldo Royo will oversee the full delegation.

Menorca’s José María Borrás will compete in cooking, assisted by James Davies; both work at Aquíara. José González and Macarena Saseta, both of Es Gerret, will represent Eivissa and Formentera in baking.

The contest brings together professionals from across Spain at the Institución Ferial de Badajoz exhibition centre, during the third Espiga agri-food fair. Monday 19 October is for savoury cooking; baking follows on Tuesday 20 October. In both categories, competitors must show technical skill and creativity while working with products from Extremadura’s cuisine.
